Green Papaya Salad (SomTum)
Ingredients
Finely shredded Thai green papaya= 2 c
wedged tomato cut into= 2
roasted peanuts = 1/3 c
dried shrimp= 2 tablespoons
sugar= 2 T
fish sauce 2 T
Garlic= 2 Large clove
Lemon juice= 2
Fresh chili pepper = 5 for hot taste
How to cook:
Pound chili and garlic together until fine.
Add papaya, tomato, sugar, fish sauce, and lemon juice.
Add peanuts, dried shrimp.
Serve with sliced cabbage
Note: When papaya is not available, carrot can be use as a substitute

Tom Yum or Spicy Sour Soup
Ingredients
Meat such as shrimp, chicken, fish, or pork
Chopped green onion= 2 tablespoons
Lemon glass: 1 root
Water = 3 cups
Ginger= 3-4 slices
Yellow onion = 1/2
Straw mushroom =6-7
Big red tomato = 1-2
Leech lime leaf= 1-2 leafs
Lemon or lime juice= 2 tablespoons
Chilli pepper = 5 (this is for hot test)
Chilli paste with soya bean oil or Nam Prik Paow in Thai = 1 tablespoon
Fish sauce = 2 teaspoons
Chopped - Chinese parsley = 1/2of tablespoons
How to cook:
Boil water in a pot over medium heat
Add lemon glass, ginger, chilli pepper and yellow onion
When the water is boiled, throw in the meat (pork, fish, chicken, or shrimp)
When the meat is cooked, add tomato, chilli paste with soya bean oil, fish sauce, lemon juice, and straw mushroom.
Throw in the leech lime leafs, green onion and Chinese parsley and ready to serve

Kao Pad Koong or Thai Fried Rice with Prawns
Ingredients:
1. Cooked rice= 3 cups
2. Shrimps with medium sized= 12
3. Eggs= 2
4. Fine sliced spring onions= 3
5. Fish sauce=2 tablespoons
6. Vegetable oil=3 tablespoons
7. Fine sliced garlic= 3 cloves
8. Minced red chilli =1/2 (for medium-spiced)
9. Sliced cucumber= 1
10. Fresh coriander=1/2 cup
11. Wedged lime=1
12. Wedged tomato=1
How to cook:
1. Place vegetable oil in a wok. And then add garlic and chilli. Fry over medium-high heat (about 1 minute) until fragrant.
2. Add prawns and stir fry until cooked thoroughly.
3. Move the above ingredients aside and crack egg into the wok. Stir to cook and break up the egg. When egg is nearly cooked, add the rice. Stir fry and keep the heat in medium-high.
4. Add fish sauce, and tomato, keep stir-fry for another 1-2 minutes. Before serving, sprinkle with spring onion, and coriander on top and place cucumber and lemon besides the fried rice for decoration. Serve with chopped chilies in Fish Sauce for better taste.
